Scrambled Tofu Bagel

Indulge in the ultimate breakfast delight with our Scrambled Tofu on Bagel. Served on a perfectly toasted bagel, this dish takes vegan breakfast to a whole new level. Our creamy and flavourful tofu scramble is enhanced by the addition of smashed avocado, creating a luxurious and satisfying combination. The crispy bagel provides the ideal textural contrast, making every bite a delightful experience.

To elevate the flavours even further, we sprinkle a generous amount of hemp seeds on top. These tiny powerhouses not only add a nutty taste but also provide an abundance of protein and omega fatty acids, making this dish as nutritious as it is delicious. We also garnish with fresh rocket leaves, adding a touch of peppery freshness to complement the savoury tofu.

Ingredients

Serves 1
  • 1 bagel
  • 1 avocado
  • 150g tofu
  • 1 tsp dijon mustard
  • 1/2 tsp onion granules
  • 1/2 tsp garlic granules
  • 1/4 tsp kala namak black salt (lends a eggy flavour - optional)
  • 1/2 tsp turmeric
  • 1/2 tsp pepper
  • 2-3 tbsp vegan mayo
  • Pinch sea salt

Method

  1. Toast your bagel
  2. Crumble the tofu into a bowl with your hands
  3. Proceed to add the dijon mustard, onion granules, garlic granules, black salt, turmeric and pepper, mix well
  4. Now add the vegan mayo and mix well, the tofu mix will now start to look a lot like egg mayo
  5. Spread vegan butter and smashed avocado onto your toasted bagel, season the avocado
  6. Spoon the tofu mixture onto the bagels, top with rocket and hemp seeds
