Banana & Pistachio Nice Cream

I absolutely love pistachio nuts. This combination of pistachios, banana and caramel is so dreamy. You can make this for a fraction of the cost for shop bought vegan ice cream and you aren’t consuming all of those hidden nasties and preservatives, if you make your own!

Yield: Approx 1kg


8 ripe bananas
500g pistachios (de-shelled)
approx. 200g coconut milk
Caramel Syrup for drizzling


  1. Peel the bananas and chop into small disks, place them onto a baking sheet and freeze for a minimum of 6 hours or over night
  2. You will need to do the following steps in two half’s so that it all fits nicely into the blender/food processor
  3. Place half of the frozen bananas in food processor along with 300g pistachios, 100g coconut milk and 2 tbsp caramel syrup (optional) – whizz until you are left with a smooth ice cream texture
  4. Decant into a freeze-able container and do the same for the second batch
  5. Sprinkle any left over pistachios and caramel syrup on top when in the container
  6. Nice cream will last in the freezer for up to 1 month
