Feel Good Recipes

This recipe is so quick and is one of my go to evening meals if I’m in a rush or needing a nutrient boost! It’s completely packed with protein, antioxidants, vitamins and minerals!

Ingredients

1/2 broccoli
1/2 sweet potato
1 can green lentils
2 carrots
coconut oil
3 garlic cloves
1 tsp cumin
Salad leaves

Dressing

50g cashews
3 tbsp vegan mayo
1/2 tsp apple cider vinegar
2 tbsp nutritional yeast
50ml filtered water
1 tsp dried oregano
1 tsp garlic powder
Juice of 1 lemon

Method

  1. Preheat the oven to 180c, put a tsp of coconut oil in a baking tray and melt in the oven for a few minutes
  2. Dice the sweet potato & carrots, remove the baking tray from the oven and put the sweet potato & carrots in the oil covered baking tray
  3. Season with salt, pepper and cumin
  4. Roast in the oven for 20-30 minutes
  5. After 15 minutes you are going to add your broccoli florets to the same baking tray (they take less time to cook than the sweet potato & carrot)
  6. Whilst your veg is roasting, make your dressing by putting all the ingredients into a food processor & whizz until you have a thick, creamy consistency
  7. Now drain and rinse your lentils, put them in a small saucepan on a medium heat
  8. Mince your garlic cloves onto the lentils and keep string on the heat until the lentils are cooked through
  9. Make a bed of salad leaves in a bowl, chuck in your lentils, then your roasted veg, then drizzle with the creamy cashew dressing – top with any additional seeds or nuts you fancy 🙂
