Italian Sausage Salad

Sometimes as a vegan you just fancy a meat substitute. This Italian Sausage Salad will certainly satisfy those cravings while still remaining healthy. I used Linda McCartney sausages for this recipe, which were delicious, but you can choose any vegan sausages to use or you could even try making your own from soya protein or seitan.

The fried cherry tomatoes and olives mixed with the basil gave that amazing Italian flavour, that we all know and love. My recipe for the caesar dressing is amazing, its one of my favourite dressings of all time – once you’ve made the dressing, it will last for up to one week in the fridge, so you are able to use it for multiple salads all week! This salad will take no longer than 10 minutes to throw together once the dressing has been made.

Ingredients

Serves 1

2 vegan sausages
100g cherry tomatoes
50g mixed olives
50g shredded lettuce
50g baby spinach
30g cucumber
20g fresh basil
Handful of chopped, mixed nuts
1/4 tsp black pepper
1/2 tsp dried oregano
1/2 tsp dried parsley

Caesar Dressing

Yield: 2 cups

1 cup soaked cashews
2/3 cup vegan mayo
1 tbsp nutritional yeast
2 tbsp dijon mustard
4 garlic cloves (minced)
1 tbsp fresh lemon juice
1/2 tbsp balsamic vinegar
3/4 cup water
1/4 tsp pepper
Pinch of salt

Method

  1. To make the dressing – ideally soak the cashews for two hours or more. Then add all of the ingredients to a food processor, whizz until the cashews have broken down and you are left with a smooth creamy liquid.
  2. Slice the sausages, add to a frying pan with a small amount of rapeseed oil, cook for 1-2 minutes
  3. Add the cherry tomatoes and carry on cooking
  4. Whilst they are cooking – shred the lettuce and add to a salad spinner/ colander, also add the spinach (leaving one handful for the frying pan) wash all of the leaves and spin until drained – then add to a plate.
  5. Now add the olives, a handful of spinach and the herbs to the frying pan – fry for 1-2 minutes then take off the heat
  6. Finely dice the cucumber and add to the plate, now you can add the cooked ingredients to the bed of salad, along with the nuts and fresh and drizzle the salad dressing on top.
