5 Minute Scrambled Tofu

The perfect breakfast, brunch or lunch. This is a no cook recipe and it only takes to make as long as the bagel takes to toast. The eggy texture and taste of this will impress you and even satisfy some eggy cravings you might have going on. I paired mine with smashed avo, hemp seeds and rocket. What a combo it was, plus absolutely packed with protein and essential fatty acids.

Serves 1

Ingredients

1 bagel
1 avocado
150g tofu
1 tsp dijon mustard
1/2 tsp onion granules
1/2 tsp garlic granules
1/4 tsp kala namak black salt (lends a eggy flavour, but can be made without)
1/2 tsp turmeric
1/2 tsp pepper
2-3 tbsp vegan mayo
Pinch sea salt

Method

  1. Toast your bagel
  2. Crumble the tofu into a bowl with your hands
  3. Proceed to add the dijon mustard, onion granules, garlic granules, black salt, turmeric and pepper, mix well
  4. Now add the vegan mayo and mix well, the tofu mix will now start to look a lot like egg mayo
  5. Spread vegan butter and smashed avo onto your toasted bagel, season the avo
  6. Spoon the tofu mixture onto the bagels, top with rocket and hemp seeds
