Wild Garlic, Rosemary & Tomato Focaccia

Focaccia is hands down the tastiest bread out there! Check out this recipe with Wild Garlic, Rosemary and Cherry Tomatoes. The Wild Garlic has antibacterial and antibiotic properties and has been proven to reduce blood pressure, plus its a lot of fun to forage!

Yield: 1 Focaccia – Serves Approx 4

Ingredients

250g strong white bread flour
2tsp rosemary salt (plain sea salt will work fine if you don’t have rosemary salt)
14g dried fast action yeast
200ml warm water
2tbsp olive oil
Fresh rosemary
Fresh wild garlic
Approx 10 cherry tomatoes

Method

  1. Mix the flour, yeast and salt in a bowl
  2. Mix the warm water and olive oil in a jug, then add to the dry mix (slowly)
  3. Fold the wet mix in until a sticky dough forms
  4. Flour your work surface for the dough
  5. Kneed the dough for approx 10 mins
  6. Once the dough is elastic like, drizzle some olive oil in a bowl, put the dough in the bowl and cover with cling film – leave to prove for around 2 hours
  7. Once the dough has risen, slightly knock back the dough (not too much as you want to keep some air in it)
  8. Line a baking tray and stretch the dough out so that it covers the whole baking tray
  9. Cover the stretched out dough with a damp tea towel and leave to prove for one more hour
  10. Preheat the oven to 180
  11. Add the cherry tomatoes, rosemary needles and chopped wild garlic to the stretched out bread (just literally poke them into the dough) – add some salt on top too
  12. Once done, stick the Focaccia in the oven and cook for 20 minutes
  13. Once the bread is crispy and golden, drizzle a little olive oil on top and add some extra salt and pepper if you fancy & ENJOY!!
