You would never believe these are vegan! So these days we are very lucky to have vegan substitutes such as vegan feta. In this recipe I used Bute Island Sheese ‘Feta’ which is one of my favourites! These delicious triangles are made with filo pastry which most brands you will find in the supermarket are vegan. Great for a party snack!

Ingredients

18 sheets filo pastry
500g of fresh spinach
1 pack of vegan feta
1 lemon
4-5 stalks of fresh dill
Rapeseed oil
Salt & Pepper to taste

Method

  1. Bring a small saucepan of water to the boil and wilt the spinach, drain and cool
  2. Crumble the whole block of ‘feta’ and mix in with the spinach
  3. Juice the lemon and add the the spinach and ‘feta’ mix
  4. Shred the dill into the mix and finally add a pinch of salt and pepper
  5. Set your mix to the side, Preheat the oven to 180 nows time to get the filo pastry ready
  6. The filo pastry is very fragile so you will need to be very careful as it will rip easily. Lay the pastry sheets one by one on the work surface, brushing rapeseed oil between the layers. You want a total of three layers
  7. Once you have the three layers stuck together, keep the sheets vertical and cut three even strips into the filo sheets
  8. Spoon around 1tbsp of the mix onto the bottom right hand side of the strip
  9. Now you want to fold into a triangle shape so that the mixture is covered with pastry, keep doing this all the way up the strip until there is no more loose pastry left
  10. Ensure all of the sides are stuck down properly and there are no holes allowing the mixture to seep out when cooking
  11. Glaze the rest of the triangle and place on a lined baking tray
  12. Once all of the triangles have been made, place them all onto the baking tray and cook for 25 minutes. Until the pastry is golden brown and crispy!
